Adi's Herbed Thanksgiving Turkey

Here is a GREAT recipe for a Thanksgiving Turkey. If there is one thing we look forward to every year at Garden Fresh, it's when Adi dons the chef's apron and makes this delicious treat. ENJOY! And HAPPY THANKSGIVING!!!



Adi’s Herbed Thanksgiving Turkey

Large Deep Roasting Pan with Cover
4 Parsnips Washed and sliced thick
18lb Turkey
3 Turnips Washed and cut in chunks
Half Bulb Fresh Garlic Minced (about 5 cloves)
5 Large Carrots Washed and Sliced Wide
1 cup extra Virgin Olive Oil
1 Celery Root Washed and cut in chunks
2 tbsp white Pepper
2 Parsley Root Washed and Chopped with Leaves
1 leek chopped
1 chopped onion
1 celery Heart Washed and chopped with leaves
3 tbsp. Salt
3 tbsp chicken base
4 Sweet potato sliced thick
1 butternut squash sliced thick


Preheat oven to 325°F. Remove wrapping from turkey and bags in cavity. Remove any stray feathers and wash turkey very well (inside and out) with cold running water. Pat dry. Mix garlic, olive oil, pepper, paprika and salt. Rub all of the mixture inside and outside of the turkey. Place turkey in roasting pan with breast side up and wings turned back. Arrange medley of vegetables around turkey. Add 4 cups water or turkey / chicken stock. Cover and place in oven for 3 hours, remove cover and continue to cook till thermometer reads 165°-180°F or till all juices run clear (about half hour more). Let stand 15 min before carving.
